So yummy!

INGREDIENTS:

  • 1 pouch or 2 1/4 tsp rapidrise yeast
  • 1/4 cup lukewarm water
  • 4 1/2 cups all purpose flour or more
  • 1 egg,room temperature, beaten
  • 1 1/4 cups evaporated milk
  • 4 tbsp unsalted butter, softened
  • 3 tbsp sugar
  • 1 tsp salt
  • extra flour for kneading​​​

  • egg wash (1 beaten egg+1 tbsp water) for brushing

How to bake using Manual / Traditional method:

  • Dissolve yeast in warm water (110-130°F). Stir to dissolve and let stand for 10 minutes. Set aside.
  • While waiting for yeast to bubble,place milk, butter, sugar, and salt into a microwave-safe bowl/cup or saucepan.
  • Microwave for around 1 minute or heat over low heat on the stove. (Mixture should NOT be over 115°F or feels hot to the touch.
  • In a large bowl, combine 3cups flour, beaten egg andyeast mixture. Stir or mixto combine.
  • Add the milk mixture.
  • Add another 1 cup of flour then add more if needed. Continue mixing until a dough is formed.
  • Knead the dough on a lightly floured surface for about 10 minutes or until dough is smooth & elastic. (The dough should be soft and still slightly sticky.)

Brushed with egg wash before baking.

  • If dough is overly sticky when you do this, you need to add a bit more flour, about 1 tablespoon at a time.
  • Form the dough into a ball and transfer the dough to a lightly oiled bowl,cover with a damp cloth and let it rise in a warm place for at least an hour.
  • After rising, punch down the dough to release air packets and transfer onto a lightly floured surface.
  • Use a dough slicer to divide the dough into 2equal parts.
  • Using a rolling pin, roll 1 part of dough to a rectangle.
  • Spread ube jamevenly.
  • Roll up the dough to form a log. Slice the dough into equal parts.
  • I shaped mine by pressing a stick (I used chopstick) in the middle of a sliced dough to get a nice deep markin the middle.
  • Repeat the same procedure with the other dough.
  • Place all shaped dough in a baking pan lined with parchment paper.
  • Coverwith a damp cloth or plasticwrap and let it rise for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Brush with egg wash.
  • Bake for 13-15minutes.
  • Remove from oven.
  • Serve and enjoy!

*** Oven temp varies. I suggest to bake it the first time at 325 deg F and see how it goes oruse an oven thermometer to make sure.
*** Always check before the set time. Set time for 12 minutes and check if top is golden brown. Do not overbake.

  • Add the milk mixture.
  • Continuing on speed 2, gently add another 1 cup of flour then add1 tbsp at a time(if needed.)Continue mixing until a dough is formed and clean sides of bowl.(The dough should be soft and still slightly sticky.)​​
  • Form the dough into a ball and transfer the dough to a lightly oiled bowl,cover with a damp cloth and let it rise in a warm place for at least an hour.
